Super simple & super tasty! This colder weather makes me longing for warm food. Newly harvested (cooking) apples for a warm apple compote. If you have limited time, you can go for the super easy way. Just cut the apples and cook them with a bit of water and some raisins and cinnamon. Add some fresh grated ginger and turmeric for the extra warming effect. You can eat it like this as a snack or add you favorite topping like (vegan) yoghurt, coconut cream, (soy) vanilla pudding with some muesli or granola.
I love it with my home made coconut cream. It sounds complicated but is is actually very easy. Just buy a fresh coconut (my local Maroccon veggie store sells them these days) and scoop out the coconut ‘meat’. Blend this together with some of the coconut water, coconut sugar, cinnamon, some coconut oil, vanilla bean (optional) and irish moss paste (optional).
If you have a little bit more time ….you can make this luxurious breakfast. Also super easy!
Here I used 1 apple, 1 pear and 1/2 banana. I added the ingredients mentioned above: raisins, cinnamon, fresh grated ginger and turmeric PLUS I added some fresh lemon juice, lemon zest, anis, cardamon, a bit of salt, cayenne pepper, vanilla hemp protein powder (optional), maca (optional).
Lightly cook the fresh & dried fruits with some water and all the other ingredients.Take from the heat and add 3-4 table spoons of chia seeds.Let is soak for at least 15-20 minutes until the seeds are expanded completely. Very delicious with coconut cream and sprouted buckwheat groats. In stead of chia seeds you could also add (gluten free) oat meal.
Normally eating fruits can be quite cold for your system. By cooking them lightly and adding spices you make a nice warming breakfast.
